Lemon Cashew Candies (Vegan, Sugar, Oil & Gluten Free, Raw)
Today we are cooking sweets, or more precisely, soft and very spicy lemon balls from cashew.
Simple, delicious and very healthy.
They do not have extra oil, except for the one naturally found in nuts. They also contain no sugars and gluten (if it’s important to you) and are also great for those who try to eat “live” foods.
These balls are made from just a few ingredients and are prepared in 5 minutes.
In the recipe, I use light raisins, since they have a slightly more acidic flavor and are perfectly combined with lemon juice and peels.
The latter should be fresh, that’s how you get not just a tasty, but also a fragrant dessert.
Let’s go cooking!
We will need:
1 cup (250 ml.) of cashew
1/3 cup light raisins
1/4 tsp of lemon peel
1/2 tsp lemon juice
Chocolate for glaze (optional)
Maca powder (optional)
Grind the nuts to a powder state.
Add the lemon peels and raisins. Add the juice.
You should get a soft dough.
Roll the balls and put them into the freezer until they freeze.
Melt the chocolate.
Take out some of the balls and dip them into chocolate. The rest are rolled in powder or simply sprinkled with nuts – your choice.Put them in the freezer for a few minutes, so that the chocolate will grasp more thoroughly.
